Chicken Taco Pizza
I had one of those days when nothing sounds good to fix for dinner. I did not want to run to the store to get anything and I had plenty leftovers in the refrigerator that needed to be eaten.
I was taking an online survey about pizza and my mouth was watering for pizza. I really did not have the money to order take out so I went digging in the pantry. I have to say that what I ended up making turned out to be easy, fast and really good!
Chicken Taco Pizza
Pizza Crust - enough to fill to make (2) 12" round pizzas. Store bought from the refrigerator section is just fine to use. I used my Oster bread making machine to make the dough. Click here for the recipe that I used.
Sauce - instead of a tomato based sauce I used a can of Old El Paso Mild Enchilada Sauce
Toppings - I used shredded cooked chicken, browned ground beef, sauteed onions and green peppers, refried beans and shredded cheese.
I spread the dough on a greased cookie sheet. I poured the sauce thinly on the dough. I spooned small amounts (quarter sized drops) of refried beans on top of sauce and spread them to the edges. (This was messy! :) Sprinkle the chicken, beef, onions and peppers on top. I shredded cheddar and pepper jack cheeses on the top. Sprinkled salt and pepper to taste. Put in a 400 degree oven for 22 minutes. I started checking it in 18 minutes. Adding minutes until the crest was golden brown and the cheese was bubbly.
