After working all day, the last thing I wanted to do was cook dinner but it had to be done. My daughter was watching cooking channel as I walked past the living room heading for the kitchen. The only thing that I heard as I passed was, “Scalloped Potatoes and Ham, that is what is for dinner!” Ree, the Pioneer Woman spoke words directly to me. I was hooked and that was exactly what I had for dinner! I did do mine different and it was not as pretty as hers when it came out of the oven but it was wonderful!

Roasted Chicken

Roasted ChickenLast night I cooked a roasted chicken with creek-bank potatoes and green beans. Needless to say we did not have leftovers. Chicken is easy and I like it best cooked with simple spices. Feel free to add more spices if you like. Rosemary is a great spice to add if you are in the mood. I would add about 4 tablespoons of fresh rosemary.

Here is how I made the chicken. 

Ingredients:

  • 1 whole roasting chicken (5 to 6 pounds)
  • 1 teaspoons salt
  • 1/2 teaspoons pepper
  • 3 garlic cloves, minced

Chicken Taco Pizza

Chicken Taco PizzaI had one of those days when nothing sounded good to fix for dinner. I did not want to run to the store to get anything and I had plenty leftovers in the refrigerator that needed to be eaten. 

I was taking an online survey about pizza from InboxDollars and my mouth was watering for pizza. I really did not have the money to order take out so I went digging in the pantry. I have to say that what I ended up making turned out to be easy, fast and really good!

Easy Meatloaf

1.5 to 2 lbs. ground round (at least 83% lean)
1 medium size onion diced
1/2 cup of bread crumbs (try italian seasoned to add more flavor)
2 eggs
1 tsp salt
1 clove garlic
1/4 cup ketchup
1/4 cup mustard (try spicy mustard to change the flavor)
